Tagine for Christmas!

My very thoughtful parents gave me a tagine for Christmas. It works a treat :)

    It's a cooking dish of course!
    Or to be more precise, a dish used for cooking with a conical lid originally from North Africa and maybe the Middle East. It works a lot like a pressure cooker (only requires low heat, does not require a lot (if any) excess liquids).
    The word tagine (or tajine in French) also refers to the style of dish cooked in this vessel.

    No vent Greg, the idea is the steam from the food circulates and builds up pressure in the lid, thus raising the temperature of the food without applying extra heat (i.e. a constant low heat source is used, but it's effects are amplified by the closed cooking). It's not as efficient as a pressure cooker in that respect as the lid is not clamped down and sealed, but it's still remarkably effective.

    Yep that's it Melissa. I have a multitude of these types of recipes (I had a big Moorish cooking phase not long ago) :)
